Pumpkin Chocolate Truffles

This recipe is similar to rum balls but with teriffic for fall with a pumpkin theme.
|
| 2-1/2 Cup Vanilla Wafers, crushed |
| 1 Cup Ground Almonds, toasted |
| 3/4 Cup Confectioners' Sugar, sifted and divided |
| 1-1/2 teaspoon Ground Cinnamon |
| 1/4 teaspoon Ground Cardamom |
| 6 oz Semi-Sweet Chocolate Chips |
| 1/2 cup Canned Pumpkin Puree, unsweetened |
| 1/3 cup Coffee Liqueur, you can substitute coffee if you like |

Instructions |

In medium bowl, blend together the vanilla wafer crumbs, ground almonds, the 1/2 cup 125ml confectioners' sugar, cinnamon, and cardamom. |

Blend in the chocolate chips, pumpkin puree, and coffee liqueur. If using plain black coffee as a substitute, you may need to add a bit more confectionars' sugar. |

Using a teaspoon of the mixture, roll into 1 inch 2.5 cm round balls. Repeat until all the mixture is used. |

Refrigerate the balls until firm, then dust with or roll in the remaining confectioners' sugar just prior to serving. |
