  Beef and Guinness Stout Casserole  
  Well what would a good Irish recipe be without a little Guinness.

  Greek Roasted Eggplant Salad  
  One of my favorite salads is not really what many Americans call a salad. But this recipe is a wonderful blend of roasted eggplant, garlic, lemon juice, and fresh herbs. This dish is great served with warmed pitta bread and hommos. You can vary the herbs to make your own variation of this salad. I was given this recipe by the owner of DogByte's favorite lunch spot.  
  Hoppin' John  
  This recipe came to America from Africa though the slave trade. This is a common dish served by many Southerners on New Year's Day. It is reported to bring good luck.  
  Hurricane  
  The drink that to many IS Mardi Gras--The Hurriacane. The creation of this passion-colored relative of a Daiquiri drink is credited to Pat O'Brien. He is reported to have invented the Hurricane in the 1940s in New Orleans. Rumors say he needed to get rid of all the rum that Southern distributors forced him to buy before he could get a few cases of other spirits. He poured the concocosion into hurricane-lamp-shaped glasses and gave it away to sailors. The drink caught on, and it's been part of the celebration ever since.  
  Hush Puppies  
  Hush puppies are a southern favorite accompaniment to fried catfish, and are often served with other types of fried fish. Hush puppies are also sometimes known as corn dodgers. These deep fried little cornmeal breads are a favorite of one of my best friends. The popular legend surrounding the hush puppy takes us back to Civil War days. Southerners would sit beside a campfire, preparing their meals. If Yankee soldiers came near, they would toss their barking dogs some of the fried cakes with the command 'Hush, puppies'. You can use optional seasonings, such as garlic powder, red pepper flakes, black pepper, if you like.

  This Irish Ginger Cake is wonderful to make for an afternoon gathering of friends. Coffee lovers will love the coffee and spice flavorings. I think this cake is wonderful to enjoy with a little sprinkle of powdered sugar or whipped cream, served with Irish Coffee, and good friends.
