  Cardamom Orange Pound Cake  
  Pound cakes are easy to turn in to many elegant desserts. Pound cakes can also be flavored many creative ways. The name pound cake is derived from the basic old time recipe having butter, flour, sugar and eggs in pound measures. Today's recipes are sweeter than the pound cakes of pioneer days. Many of you know I am quite passionate about cardamom. If you have tried this spice in your fruit dishes, pumpkin pies, spices cakes, sweet and savory dishes, etc...you agree, this spice should be cherished in your spice cabinet. When I take my fruit pies to friends for dinner they always wonder what I did to make the fruit taste so fragrant...'Come on what is your secret'. It was easy just a little cardamom Make this recipe and you will understand the passion I have for cardamom.  
  Champagne Sherbet Punch  
  Looking for a special drink recipe for your New Year's Celebration or other party? For a non-alcoholic version, just substitute sparkling apple juice for the champagne or wine. Either way, this drink is sure to delight you and your guests

  My friend Geri gave me this recipe years ago and this bread recipe quickly became a standard holiday bread I make in my house. This is a great recipe to enjoy for the holidays with this breads tart cranberries and orange flavorings. Great for enjoying with afternoon coffee or tea. This bread is better if the cranberries are chopped. Just cut in half is good. It is easiest to cut cranberries, if they are frozen. So buy lots of cranberries on sale and freeze them. You can usually use them with out a lot of thawing time...just a few minutes.  
  Cream Cheese Mints  
  These candy mints are a holiday favorite. The smooth melt in your mouth taste..the great peppermint flavor. This great candy recipe requires no boiling or baking. These mints make great gifts, if not for the holidays for showers and weddings. I always doubble this recipe.  
  Deadly Chocolate Torte  
  This recipe is easy to make and will impress a crowd. If you love brownies or dense chocolate cake you will love this recipe. Plus it includes that all important food group---chocolate I originally got this recipe from my friend Mary Z. but over the years I have modified it just a bit. I have been in many restaurants and eaten a similar tort but not quite as good as Mary's. You can decorate the top with a few chocolate dipped strawberries on top or chocolate dipped orange slices. A swirl of melted white chocolate also looks nice. I like to add a splash of raspberry liquor to the glaze to give it a hint of raspberries.  
  Dogbyte's BBQ Honey-Chili  
  I just love it when Dogbyte makes this great low fat barbecue recipe. The recipe is low in fat because the chicken skin has been removed and the only additions are wonderful spices and the final drizzle of honey. This recipe would also be great for chick wings and low calorie too. In this recipe there are no specific amounts for the spices just general amounts to cover the chicken pieces. Let your taste buds and eye be the judge. This recipe calls for large amount of chili powder so use your favorite kind. We usually serve this chicken with a nice green salad and a good Mexican beer.  
  Double Chocolate Mint Cookies  
  Love chocolate and mint well these cookies are for you. I modified the recipe by using one cup of chocolate chips and one cup mint chips.

  Ginger Peach Preserve Glazed Turkey

  This hard sauce is great served beside unfrosted cakes instead of whipped cream. The sauce is called hard because of the Brandy.  
  Holiday Broccoli Salad  
  This salad recipe is nice for the holiday season with broccoli, golden rasins and dried cranberries. You can be really creative and use a medly of mixed dried fruit. For a lower calorie verision of this recipe use lowfat sour cream or non fat plain yogurt in place of the mayo.  
  Holiday Fruit Cordials  
  Cordials are perfect for sipping on a cold winter evening or for a nice after diner drink. You could pour a bit of the fruit cordial on ice cream or pound cake for a change of pace. The great part is that these fruit cordials are easy to make and can make a nice gift during this holiday season. The recipe calls for dried fruit. I recommend dried pears, apricots, cherries and cranberries. My personal favorite is a mix of 3/4 lb apricots and 1/4 lb cherries. Let me know what creations you come up with. The cordials will need to be stored for about 3 or 4 weeks to develop a full flavor. Enjoy and please drink responsibly.  
  Honey Glazed Ham  
  This recipe is a great way to make your cooked ham taste like a honey baked ham. Not only does this ham taste good but looks great with beautiful caramelized glaze studded with cloves. If you choose you can add optional pineapple rings on top of the ham while baking.  
  Hoppin' John

  The drink that to many IS Mardi Gras--The Hurriacane. The creation of this passion-colored relative of a Daiquiri drink is credited to Pat O'Brien. He is reported to have invented the Hurricane in the 1940s in New Orleans. Rumors say he needed to get rid of all the rum that Southern distributors forced him to buy before he could get a few cases of other spirits. He poured the concocosion into hurricane-lamp-shaped glasses and gave it away to sailors. The drink caught on, and it's been part of the celebration ever since.

  Latkes - Not Fried  
  Latkes are traditionally served with sour cream or apple sauce. These baked Latkes save in calories because they are not fried as the traditional method for making Latkes. If you like to save a few more calories use non fat yogurt instead of sour cream.

  This is a great dish to whip up the day after thanksgiving. Great served with all the left over pies and other Thanksgiving treats. You can also make this recipe anytime with thick sliced deli turkey and stove top type stuffing.

  You will never make sweet potatoes with those little marshmallows again. You will love the topping of pecans and brown sugar on this sweet potato casserole.  
  Mexican Wedding Cakes  
  Today's cookie has so many names. Some people call them Snow Balls, or Russian Tea Cakes. Sometimes you see this recipe not rolled in to little ball and sprinkled with confectioners' sugar but in the shape of crescent moons. The buttery cookie with the sugared outsides is just awesome to taste. Whether this recipe is of Russian, Spanish or Mexican origin I do not know, but they are MY FAVORITE COOKIE. Amazing because there is not one lick of chocolate any where in these. I have been making these cookies with my mom almost religiously since I was five. So this is also a great recipe for your kids to help with....start them rolling the snow balls. There are some quicker cooking versions of this recipe...I have tried them all and frankly the cookie is not as good. A low temp oven and long cook time makes these cookies great Since these cookies do not spread while baking, you can put many on a single cookie sheet. You should be able to put this whole recipe on a single cookie sheet. This recipe doubles nicely. This cookie keeps well and looks great on a dish with rum balls. These cookies are a great gift idea with some type of elaborate Martha Stewart-style packaging.  
  Mulled Cider  
  Mulled Cider is great during the holidays. While the Cider is simmering your home will be filled with a wonderful fragrance. You can adjust the spices to your taste. The basic spices for mulled drinks is cinnamon and cloves but. You can also add a bit of grated nutmeg and whole cardamom seeds if you desire.  
  Mulled Wine  
  Mulled Wine is great during the holidays. While the Wine is simmering your home will be filled with a wonderful fragrance.  
  Pandora's Turkey  
  Great recipe for ourdoor cooking of the classic Thanksgiving turkey. Great way to get the man of the house, off the couch and outdoors cooking! Note: you will need a covered, kettle-type grill, 5 lbs. charcoal briquettes for this recipe. This recipe is a quick cook method which is not recommended for a stuffed turkey! If you choose to use this cooking method you might enjoy seasoning the turkey with sage from the sage roasted turkey recipe.

  Love Pumpkin Pie, Love Pecan Pie Well this pie is both. Great served with homemade whipped cream.  
  Pineapple, Orange, Cranberry Relish  
  Cranberry relish and sauce are so easy to make and can be made a day or two ahead of time and stored in the fridge. This relish recipe uses mandarin oranges and pineapple. I much prefer cranberry relish which has a nice fresh taste. You can add sugar to taste and enjoy with your holiday meal. Besides turkey, cranberry relish is also good with pork.

  Making Rum Balls is more like making mud pies...lots of fun. Rum balls are easy and quick to make no bake cookie. The classic recipe has been around for many years. You can always substitute Brandy or Bourbon for Rum, if you like. One taste, and you too will likely be hooked -- if not for life. Enjoy Hic  
  Sage Roasted Turkey  
  Sage and rosemary are wonderful with turkey. This recipe make a beautiful presentation with the sage leaves fanned out under the turkey skin. I like to use extra sprigs of rosmary and sage under the roasting pan to give even more flavor to the turkey and the future gravy.  
  Sopaipillas  
  Sopaipillas or Fried Bread are great for desert served with honey.  
  Spiced Baked Apples and Sweet Potatoes  
  These spiced sweet potato and apple bake is a favorite of kids. The spices really bring out the flavors of the sweet potatoes and apples. You can leave out the marshmallows, but if I do I add a chunked up apple peeled to the mixture before baking.  
  Spiced Caribbean Christmas Cake  
  Notice what I did not call this recipe...shhhhh don't tell Even if you hate fruit cake give this recipe a try it just may change your mind. This cake is very easy to make and colorful.
