  Barbecue Pork Adobo  
  Adobo recipes are very popular in the Southwestern United States. If you have not tried adobo before the chili sauce is easy to make and generally mild. Ancho chilies are also the most popular chili used in Mexico. The adobo sauce, in this recipe is a spicy, ancho chili-vinegar paste (great for tenderizing) in which the pork is marinated and then barbecued. This recipe also is wonderful garnished with salsa verde.  
  Basic Green Chili  
  This chili comes from the southwest and its heat can be quite deceiving. We do not recommend this dish for chili eating novices. This chili is different from what most people think of in regards to chili, because it is not made with the familiar red ground chili but with fresh green or canned green chilies. This chili also contains NO beans. Many people quarrel that chili is not chili with out beans. Others say a good chili should not be diluted with the likes of beans ... leave them for the side dish. This chili can be served in warm tortillas with a little jack cheese sprinkled on top. If the chili is to hot the top with a little sour cream. Complement this meal with a nice side dish of stewed black or pinto beans, salad. This recipe also goes wonderfully with your favorite cold beer, that you did not use in making the chili that is.  
  Blackened Catfish  
  This recipe is a wonderful low calorie and quick meal. Wonderful with a hint of lime and blackening spices. I usually purchase farm-raised catfish.  
  Caribbean Pork Roast  
  This recipe combines wonderful spices which beautifully flavor the Pork Roast.  
  Citrus Oven-braised Corned Beef  
  Irish immigrants to North America added corned beef and cabbage into our culinary melting pot because it was good, cheap food. Corned beef is also tasty when baked in the oven using a method like in this recipe. You should note that, the weight of the meat shrinks by about half as the brisket cooks.  
  Cranberry Stuffed Pork Chops  
  I get a lot of people requesting recipes for two. I thought this recipe might be perfect for a Thanksgiving meal for two. Add the mashed potatoes, a nice salad, and pumpkin pie and you have a nice Thanksgiving feast or hearty meal. This recipe calls for dried cranberries or dried cherries. I like to use a mixture of both.  
  Crockpot Pot Roast  
  This is a very quick and easy way to make a pot roast. I do like to sear the pot roast in a pan for a few minutes before placing in the crockpot.  
  Dogbyte's BBQ Honey-Chili  
  I just love it when Dogbyte makes this great low fat barbecue recipe. The recipe is low in fat because the chicken skin has been removed and the only additions are wonderful spices and the final drizzle of honey. This recipe would also be great for chick wings and low calorie too. In this recipe there are no specific amounts for the spices just general amounts to cover the chicken pieces. Let your taste buds and eye be the judge. This recipe calls for large amount of chili powder so use your favorite kind. We usually serve this chicken with a nice green salad and a good Mexican beer.  
  Ginger Peach Preserve Glazed Turkey  
  Nothing could be better than peach perserves to flavor your turkey. This is a wonderful sweet roasted turkey (also good with chicken) recipe.  
  Green Chili Roasted Turkey  
  This recipe is great roasted turkey (also good with chicken) recipe. This turkey does not get spicy hot from the chilies, just a nice mellow green chili flavor. If you would like your turkey to have a bit more kick add 2 roasted Jalapenos to the green chili butter.  
  Grilled Chicken With Green Chile Sauce  
  I love to marinate chicken over night to add lots of flavor without lots of fat. I love this nice green chili, onion and tomatillo sauce. You can add or subtract the chilies to find a spiciness you like.

  This recipe came to America from Africa though the slave trade. This is a common dish served by many Southerners on New Year's Day. It is reported to bring good luck.  
  Moroccan Spiced Roasted Chicken  
  This recipe is a different flavorful roasted chicken. The stuffing is made of sauteed onions and dried fruit. I modified this recipe which I received from a friend years ago.  
  Pandora's Turkey  
  Great recipe for ourdoor cooking of the classic Thanksgiving turkey. Great way to get the man of the house, off the couch and outdoors cooking! Note: you will need a covered, kettle-type grill, 5 lbs. charcoal briquettes for this recipe. This recipe is a quick cook method which is not recommended for a stuffed turkey! If you choose to use this cooking method you might enjoy seasoning the turkey with sage from the sage roasted turkey recipe.  
  Peking Pork Chops  
  This recipe is great for busy families. You can put this recipe together in the morning and then when you want to eat just make some rice and a vegetable. Enjoy with steamed white rice like jasmine or basmati.

  This recipe is from K. Anglin-Houston kitchen. Her email stated that, 'sounds like a Dogbyte recipe for Pork Chops if I ever heard one' Yes she sounds like she knows Dogbyte all to well. This recipe seems to have a lot of ingredients and steps, but all you need is one large skillet to cook the whole thing K. mentioned that they serve this recipe with a Mexican rice and a green vegetable. She also said that, 'the recipe as listed isn't very hot if you ask me, I usually add some sliced jalapenos.'  
  Pork Medallions with Port Cranberry Sauce  
  This pork recipe with a port, shallots, cranberry sauce will make a nice elegant quick diner. Also a great Christmas Eve diner.  
  Pork Vindaloo

  This recipe is a whopper and will feed your Superbowl crowd. Be prepared to have a large pot for this recipe The nicest thing about this recipe is the ease that it is to prepare, shopping for all of the ingredients is the time consuming task. Wade recommends making his chili 4-5 Days before Superbowl (oops ok maybe a day before), and freezing it until Sunday. Wade says that he plans eat at 1/2 time, so he puts the chili on the stove at low heat 9 hours prior to 1/2 time, stirring occasionally. Wade bragged that, 'The hardest part is trying to keep all of the guests out of it until 1/2 time, the aroma of this Chili is INCREDIBLE'
