Interesting Cooking Notes

Your Pans depending on the reflective or absorptive quality will effect roasting and baking time. Recent tests have shown that an hour can be cut from the roasting time of a 10 to 12 pound turkey if it is cooked in a dark enamel pan that absorbs heat rather than in a shiny metal one that reflects it.



Timing Your Cooking
Foil has insulative qualities when used in wrap-cooking.
Where you place an item in the oven will effect its cooking time and/or the final product.
The temperature of the food (room temp. or refrigerated) at the start of cooking will effect the cooking time. One of those basic laws of Thermodynamics
