Very yummy. Tastes just like little squares of pumpkin pie. Great w/whipped cream.  > -*- Dessert Recipes -*- > Great Pumpkin Squares > from Nathan's Kitchen > > > Preparation Time: 15 minutes > Cooking Time: 55 minutes > Serves: about 24 squares > Cal: unknown > > Amount Ingredient > -------- ----------------------------- > 1 C (280g) Flour > 1/2 C (140g) Old Fashion Rolled Oats > 1/2 C (100g) Packed Brown Sugar > 1/2 C (115g) Butter or Margarine > 2 C (500ml) Pumpkin, canned or steamed and mashed > 13 1/2 oz Evaporated Milk (422ml) > 3/4 C (175g) Sugar > 2 Eggs > 1/2 tsp Salt > 1 tsp Ground Cinnamon > 1/2 tsp Ground Ginger > 1/4 tsp Ground Cloves > 1/2 C (125ml) Chopped Pecans > 1/2 C (100g) Packed Brown Sugar > 2 T Butter or Margarine > > Preheat oven to 350F (180C). > > First you will make the crust for the squares, in a > bowl, combine flour, oats, brown sugar and 1/2 cup butter > until the mixture is crumbly. You can use an electric > mixer on low if you like. > > Press the crust evenly into an ungreased 13x9 inch > (33x22cm) pan. > > Bake the topping at 350F (180C) for 15 minutes. > > To make the filling, using a large bowl, combine pumpkin, > milk, eggs, white sugar, salt and spices.
